Make a huge batch, because people will want more.
2 cups all-purpose flour
3 tbsp cane sugar
3 tsp baking powder
1 tsp baking soda
1 tsp salt
2 cups buttermilk
6 tbsp butter
1 tsp vanilla
Mix together the flour, sugar baking soda, baking power, and salt.
Use another bowl to combine the buttermilk, butter, eggs, and vanilla.
Slowly add the buttermilk mix to the flour mix. Mix to blend. Set the batter on the counter for 5 minutes
Heat a griddle or skillet. It needs to be hot, but not overly hot. When griddle is the right temperature, add a tablespoon of butter.
Use half a cup of batter per pancake. Place the batter on the grill. Flip it when the top starts to bubble.
Use up the entire batter. Place pancakes on a platter. Top with syrup or confectioners’ sugar.
