Ingredients :
50 ladyfingers
6 eggs
1 cup whipped cream
¾ cup sugar
½ cup cognac
¼ cup cocoa powder
1 ½ cup espresso coffee
8 oz mascarpone
Instructions :
- Separate the egg yolks from the egg whites and set them aside
- Get the egg yolks and beat them well until creamy and add mascarpone, mixing well until blended
- In a bowl, beat whipped cream until stiff and add to egg mixture, mixing with a spatula
- In a separate bowl, whisk the egg whites until stiff and add to existing mixture
- Mix the cognac and the espresso
- Dip the ladyfingers into the liquor mixture and lay them beautifully on a baking dish
- Cover the layer of ladyfingers with half of the cream mixture, covering everything, then dust it with cocoa powder
- Add another layer of ladyfinger, then cream and cocoa powder (and more layers if you have enough ingredients to do so)
- Cover the baking dish and refrigerate for 24 hours
Tiramisu may not be a traditional Iranian dessert but it is a common dish that is enjoyed in the region and is quite familiar to many people. If to be served with children, the espresso and cognac content could be adjusted and removed. Substitute it with cocoa for a rich chocolate-y taste and add some cinnamon for added character.
