Tikka Masala Sauce
24 large shrimp, peeled and deveined (about 1 1 ⁄ 2 pounds)
Cooking spray
1 ⁄ 4 teaspoon salt
1 (8.5-ounce) package microwaveable precooked basmati rice
3 tablespoons chopped fresh cilantro
1 ⁄ 4 teaspoon coriander
- Preheat broiler.
- Prepare Tikka Masala Sauce through step 1.
- While sauce cooks 5 minutes, arrange shrimp on a broiler pan coated with cooking spray. Sprinkle shrimp with salt, and coat with cooking spray. Broil 2 minutes on each side or until shrimp are done.
- While shrimp cook, microwave rice according to package directions. Place rice in a medium bowl; stir in cilantro and coriander.
- Complete step 2 of Tikka Masala Sauce recipe. Stir shrimp into sauce. Spoon rice into each of 4 shallow bowls. Spoon Shrimp Tikka Masala evenly over rice. Yield: 4 servings (serving size: 6 shrimp, 1 ⁄ 2 cup sauce, and 1 ⁄ 2 cup rice).
