For the salad, assemble:
1 head of red chicory, thinly sliced
½ small fennel bulb, thinly sliced
100 g strawberries, hulled and chopped
1 tbsp pumpkin seeds
handful of fresh mint leaves
For the dressing, mix:
1 tbsp extra virgin olive oil
1 tsp lemon juice
pinch of salt and pepper
VEGETARIAN ALTERNATIVE : Add 50 g cheese, such as goats’ cheese or cottage cheese
