SALADS

OAK-SMOKED CHEDDAR, PEACHES & BLUEBERRIES

For the salad, assemble:

50 g mixed baby salad leaves (e.g. chard, spinach and red oak leaf lettuce)
2 small peaches, cut into wedges
handful of blueberries
50 g oak-smoked Cheddar, chopped
handful of walnuts, chopped
handful of fresh mint leaves

For the dressing, mix:

1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
pinch of salt and pepper

  • OMNIVORE ALTERNATIVE : Add some Parma ham, speck or serrano ham
